Mulberries are rich in antioxidants, vitamins, and minerals.
Mulberries are the berries from the silkworm tree and are known in Spanish as moras. They are native to warm subtropical regions of Africa, Asia, and America.
These fleshy berries are particularly good to make raw and vegan pie crusts because of their sweet taste and sticky texture. Just put them in a food processor until you get a paste, and then press them against the bottom of your pan. They also go incredibly well in pie fillings, cakes, cookies, or any raw desserts, including raw vegan ice cream! If you're not a kitchen fan however, you can of course have them on their own as a snack, or mix them with other dried fruits, nuts, cacao nibs, or granola to snack on when you need some extra energy or have a sugar craving, or to sprinkle over some coconut yogurt,a fruit salad, or a chia parfait for breakfast.
Health benefits of Mulberries include:
-High in anthocyanins which potentially protect against cancer, aging and neurological diseases, inflammation, diabetes, and bacterial infections
- Contain resveratrol which protects against stroke
-Excellent source of Vitamin C, a powerful antioxidant that helps against infectious agents, counters inflammation and scavenges harmful free radicals
-Have a carotenoid called zea-xanthin that protects the eye retina from ultraviolet rays
Also rich in:
-Iron, which is rare among berries
-Potassium, manganese, and magnesium, antioxidant minerals helpful in lowering blood pressure and regulating the heart
-B-vitamins and vitamin K
-Small but significant amounts of vitamin A and vitamin E
