Heart-Loving Tiger Nut Bliss Balls Recipe

Tiger Nuts are quickly becoming the darling of the health foods world for many reasons, but perhaps the most important one is how beneficial they are for the health of our hearts. These nuts, which (surprise!) are not really nuts but tubers, have all the same benefits as nuts, but without the negative allergic reactions some of them can cause. They also make a mean vegan milk that will make you never miss dairy, and their flour is an excellent substitution for many recipes that call for regular flour. Hello gluten-free pancakes and muffins!
So what makes them such a heart-loving superfood?
To make a long story short, their high levels of fiber, magnesium, good cholesterol, and other nutrients, help prevent cardiovascular disease, heart attacks, thrombosis, high blood pressure, and poor circulation.
And let’s not forget to mention that they also help control diabetes, are a digestive aid, and relieve bloating and other gastrointestinal problems.

These quick and easy lemon bliss balls made with Tiger Nuts flour are the perfect treat to have in hand when those sweet cravings kick in or when you just feel like treating yourself to something sweet (but healthy). They can be eaten as soon as you make them, or you can refrigerate them and have one or two each day. You can also make a larger batch and freeze some of them to eat at a later date. They will last in the fridge for up to five days.
Ingredients:
1/2 cup Tiger Nuts flour
2 tsp raw honey
2 tsp raw coconut oil
1/2 tsp vanilla essence
2 tsp lemon rind
4 tsp freshly squeezed lemon juice
- Put all the ingredients in a bowl and mix with a fork until everything is well incorporated and you have a smooth paste.
- Take one tablespoon of the paste and shape it into a ball with your hands. Repeat with the rest of the paste.
- Garnish each ball with a little extra lemon rind (optional).
